Quarantine made me do it

Good Morning everyone,

As most of you, I have been spending a lot of time in the kitchen the last few weeks. Following a lot of different recipes, failing some, and inventing a few successful ones myself.

Being pregnant makes me want to make everything (and eat it too) a lot more than my average none pregnant self of course.

Over the past weekend I posted two yummy, really quick and simple things I made that a few wanted to make as well, and I thought it would be easier to just post it here. Hope you enjoy them and they are successful.

First, I made a refreshing mocktail. Now, I am aware that not everyone is pregnant, and can consume alcohol, so this can easily be fixed into a standard cocktail.

M O C K T A I L (per glass)

Squeeze a third of a lemon

Add two/three drops of orange bitters

Add Frozen whole berries (I did blueberry, raspberry, blackberry. 2 of each)

Add Crushed raspberries (I did 4)

Cane sugar stirrer (for sweetness)

And a lemon wedge for garnish (I usually add a mint leaf, just didn't have any this time)

Add water/sparking water to fill the glass

(You can also add a shot of your favorite something to make it a regular cocktail)

SO REFRESHING, ESPECIALLY WITH SUMMER COMING UP

The second thing I made was the most perfect coffee cookie. I already ate like 7 ( some without coffee ) *guilty

P E A N U T B U T T E R A N D O A T M E A L B L O S S O M C O O K I E S (about 12)

2/3 cup (58g) old-fashioned rolled oats*

1/2 teaspoon ground cinnamon

1 teaspoon baking soda

1 large egg

1 cup (250g) peanut butter at room temperature or cold

6 Tablespoons (90g) packed light brown sugar*

Large chocolate chip

In a medium bowl, toss the oats, cinnamon, and baking soda together. Set aside.

In a medium bowl, beat the egg. Mix in the peanut butter and brown sugar with a large rubber spatula until combined.

Pour in the dry ingredients and slowly mix until everything is combined. Depending how thick and/or cold your peanut butter is, you’ll have to use some hands (I only used my hands).

Chill the cookie dough for 30 minutes.

Preheat oven to 350°F (177°C). Line a large baking sheet with silicone mats or parchment

Scoop the dough, about 1.5 Tablespoons each, onto prepared baking sheet

Roll with hands into a ball

Gently press down on the dough with a large chocolate chip.

Bake for 9-10 minutes. The cookies will look very soft and under-baked, but that’s ok. For crispier cookies, bake for up to 11-12 minutes.
